300 -Trecento

Average production: 1500 bottles

Composition: 100% Sangiovese

Vinification: In small steel tanks of 10 hl  with manual immersion of the skins. Controlled fermenting temperature. Maceration of the skins for at least 15 days.  Refinement for 6 months in 3 times used french oak barriques, with periodical bâtonnage of the fine lees. After clearification by decantation follows  bottling without sterile filtration.Very low contents of sulfites.

Vinified in Georgian anfora with natural environmental yeast and long maceration of the skins.
Almost no sulfites.
